If you too, can’t keep your hands off the cookie jar, these guilt-free healthy cranberry coconut oatmeal cookies will definitely work down a treat!

Refined sugar free and made out of wholesome ingredients such as oats, banana and cinnamon - this power cookie will energise and sustain your energy for hours!

You don’t need to be a professional baker to whip up these babies nor do you need to go on a huge grocery haul. If you are a relatively healthy eater, you should have most of these items in your pantry ready to go!

It all started with a strong cookie cravings and ripe banana sitting on my kitchen island on a sunny Sunday morning. I made used of what I have in the pantry and tweak it to my likings. These healthy cranberry coconut oatmeal cookies are so easy to make and the options are endless! You may swap the butter for coconut oil (for a stronger coconut flavour), use raisin or chocolate chips instead of cranberry, add in some almonds or walnuts for that extra crunch! OR even better, make it a CHOCOLATE cranberry coconut oatmeal cookies by drizzling it some homemade paleo chocolate (making extra is always a good idea)!

Healthy Cranberry Coconut Oatmeal Cookies

Prep time: 10 mins

Cook time: 35 mins

Total time: 45 minsIngredients

  • 1 large bananas
  • 2 cups of rolled oats
  • 1/4 cup of melted unsalted butter
  • 1/2 cup cranberry
  • 1 tsp of ground cinnamon
  • 2 tbsp of coconut sugar
  • 1 egg
  • Handful of desiccated coconut

Instructions

  1. Mash the bananas until its all mushy.
  2. Add in the rolled oats and melted unsalted butter.
  3. Add in the cranberry, ground cinnamon and coconut sugar and mix well.
  4. Add in an egg to bind everything together.
  5. Sprinkle a handful of desiccated coconut and mix everything together.
  6. Roll them into little balls and lay them on a lined baking tray.
  7. Bake it for 30-35 minutes at 140 degrees celcius or until golden brown.
  8. Leave it to cool on a cooling rack for 15-20 minutes or you could serve hot (it will be chewy instead of crispy!
