What's better than Tacos Tuesday?

Homemade healthy beef tacos on Saturday date night!

I was seriously contemplating ordering pizza last Saturday night because I was feeling lazy (#realtalk) but ended up settling with homemade tacos for the mister and I.

Because, you can never go wrong with healthy wholesome ingredients with lotsa fresh, crispy vegetables on a warm spring night!

The plus side is, it only takes you approximately an hour to put together everything!

AND, if you are lazy like yours truly and seek efficiency in everything, cook extras and you have taco salad for lunch throughout the week. #Winning

This recipe makes approximately 6 servings ( 2 servings for our dinner and I froze the remaining beef mince for taco salads!)

Without further ado, let's get into the recipe, shall we!

HOMEMADE  HEALTHY BEEF TACOS

Prep time: 15 mins

Cook time: 50 mins

Total time: 1 hour 5 mins

Ingredients

Beef Mince

  • 2 tbsp of olive oil
  • 2 tbsp of cumin
  • 1 tbsp (3 tsp) of paprika
  • 2 diced brown onions
  • 1 whole garlic (approximately 10 cloves)
  • 1kg premium minced beef
  • 2 cups (0.5 L) of beef stock
  • 1 can red beans , rinsed and drained
  • 1.5 can (210g) of ALDI Organic Tomato Paste
  • Stems of coriander, finely diced

Salsa

  • 4 truss tomatoes, roughly chopped
  • Juice of 2 limes
  • 1 bunch (approximately 1 cup) of coriander, roughly chopped
  • 3/4 of a red onion, finely diced
  • Salt & pepper to taste
  • Guacamole/ Coriander Pesto
  • 1 ripped avacado*
  • 1/4 of a red onion, finely diced
  • Juice of 1 lime
  • Salt & pepper to taste

Other Ingredients

  • Corn Tortilla
  • Diced Red Capsicum
  • Finely Chopped Shallots
  • Shredded Cheddar Cheese
  • Jalapeno (Optional)

Instructions

Beef Mince

  1. Saute the onions and garlic in the olive oil in a large pan
  2. Add in the cumin and paprika and cook for another 2 minutes or until the onions and garlic are fragrant
  3. Add in the beef mince and tomato paste
  4. Stir until it has browned and cooked
  5. Mix in the beef stock, red beans and the coriander stems and let it cook for approximately 45 minutes on low heat or until the beef stock is reduced
  6. Preheat the oven to 180 degrees celcius

Guacamole/ Coriander Pesto

  1. Put all the ingredients into the blender or food processor and blend it until fine*

Salsa

  1. Mix all ingredients together

Putting Everything Together

  1. Assemble all your ingredients (beef mince, red capsicum, shallots, cheese,salsa, jalapeno and guacamole) in your taco shell or make it a deconstructed one! :)
