Meal Prep 101 - Chicken Mexican Salad Recipe

It has been nice and warm here in Sydney town and what's better than a bowl of refreshing & tasty salad for lunch?

This 6 ingredients Mexican salad has been a huge favourite of mine as of late - packed with flavours (thanks to the coriander and red onion), super delicious and extremely quick & easy to make. Top it with your favourite protein of choice (I have been having them with poached chicken because it's healthy and takes no effort to cook!) and voila, a complete and balance meal ready to go. 

And, in true Eat This Burn That style, of course I made this in bulk. Because, ain't nobody have time to make this everyday! Enjoy the recipe - print it out and put it on your kitchen top. There's a video to show you how to whip together this amazing salad too!

Meal Prep 101 - Chicken Mexican Salad Recipe

Chicken Mexican Salad Recipe

Prep time: 30 mins

Cook time: 20 mins

Total time: 50 mins

This 6 ingredients Mexican salad has been a huge favourite of mine as of late - packed with flavours (thanks to the coriander and red onion), super delicious and extremely quick & easy to make. Top it with your favourite protein of choice (I have been having them with poached chicken because it's healthy and takes no effort to cook!) and voila, a complete and balance meal ready to go.

Ingredients

  • 1 red onion, finely diced
  • 8-10 strawberries tomatoes, quartered
  • 250g of frozen peas & corn, microwaved
  • 2 cups of cooked quinoa
  • 2 cups of coriander*
  • Juices of 2 fresh lime
  • 2 tablespoon of extra virgin olive oil
  • Salt & pepper to taste
  • Chilli flakes optional
  • Protein of choice - I used poached chicken in this recipe

Instructions

  1. Boil the quinoa according to packet instructions
  2. Poach the chicken in chicken/ beef stock
  3. Wash and chop up all the ingredients
  4. Mix all ingredients together, add in the EVOO, lime juice, salt & pepper and chilli flakes.
  5. Shred the poached chicken and top it on the salad
  6. Split the salad into individual portions

* I am a little obsessed with coriander. Feel free to halve it or swap it with parsley if coriander is not your favourite!
