RECIPE: Quinoa Cranberry Kale Salad
Today, I will be sharing one of my new discoveries, which is absolutely healthy and refreshing (and also to satisfy my recent obsession with coriander).
RECIPE: QUINOA CRANBERRY KALE SALAD
1 Cup of Quinoa
1 Cup of Coriander, chopped finely**
1 Cup of Dried Cranberries
1 X Lime, freshly squeezed
2 Tbsp of EVOO
1 Tbsp of cumin*
2 Tsp of cayenne pepper *
Salt & Pepper to taste
**1/3 cup for standard recipe but I used 1 cup as I am currently obsessed with coriander!
*1/2 tbsp of cumin & 1/4tbsp of cayenne pepper should suffice but once again, I love my spices.
- Cook quinoa according to package directions, once drained, transfer to bowl and refrigerate.
- Once cool, combine quinoa, cranberries, and coriander in a huge bowl.
- In a separate bowl, whisk together lime juice, EVOO, cumin, cayenne pepper, salt and pepper.
- Combine dressings with quinoa.
***** To take this salad to the next level, add in a bunch of fresh kale and mix all ingredients together.
Because I am all for fancy superfood (HA!), I added to whole heap of sauerkraut to my salad.
As you can tell by the photo above, I separated them to 4 containers for 4 lunches. #mealprep Of course, being the huge eater I am, I paired them with my protein choice of the day (which is either chicken bewbs or tuna).
Superfood Lunch: Quinoa Cranberry Kale Salad with Garlic & Almond Meal coated chicken boobs drizzled with Siracha hot sauce!
This salad is great as a light and healthy lunch or works perfectly as a side dish. You could even take it to your next family gathering, I am sure it will be as popular as the potato salad your second cousin prepared. :P
